
Ingredients:
• Hilsa fish 6 pieces
• Pineapple 1 medium
• Onion paste 2 tbsp
• Ginger paste ½ tsp
• Red chilli powder 1 tsp
• Turmeric powder ½ tsp
• Chopped onion ½ cup
• Oil ¼ cup
• Salt to taste
• Green chillies 6
• Thick coconut milk 1½ cups
• Sugar 1 tsp

Method:
1. Cut the hilsa into large pieces, wash and drain well. Rub with a little turmeric and salt and set aside for 10 minutes.
2. Grate the pineapple and keep aside. Heat oil in a pan and fry the chopped onion until golden. Add the onion paste, ginger paste, chilli powder and turmeric, and cook until the spices are well combined.
3. Add the grated pineapple and stir-fry for a few minutes. Gently add the hilsa pieces and cook carefully, allowing the fish and spices to blend.
4. Add salt, sugar and coconut milk. Cover and cook until the gravy thickens and the oil rises to the surface. Add the green chillies and cook for another 2 minutes.
5. Transfer to a serving dish and serve hot with steamed rice.
