GAU wins patent for jackfruit seed innovation

GAZIPUR, July 29: Researchers at Gazipur Agricultural University (GAU) have secured a patent for a technology that converts discarded jackfruit seeds into a concentrated mineral-rich food ingredient, an innovation expected to improve nutrition while reducing food waste.

The technology was developed through a three-year research project led by Professor Dr Md Amdadul Haque of the Department of Food Engineering and his postgraduate researcher Md Akram Hossain, with active support from Vice-Chancellor Professor Dr GKM Mustafizur Rahman.

Successfully developed in November 2025, the invention marks GAU's 21st patented technology and the first patent secured since the institution adopted its new name, Gazipur Agricultural University, highlighting a milestone in its research, innovation and commercialisation efforts.

Bangladesh is one of the world's leading producers of jackfruit, yet millions of tonnes of seeds and other by-products are discarded every year. Recognising the untapped potential of this agricultural by-product, the researchers developed a process to recover and concentrate its naturally occurring minerals for use in food products.
