How to spot authentic Padma Hilsa and avoid Gujarati fish

Buyers can identify authentic Padma Hilsa and avoid imported Gujarati variants by checking body shape, eye clarity, scale sheen, and natural aroma. 

Local fish markets are flooded with silver Hilsa, but most of these fish arrive from India or Myanmar. Unscrupulous traders sell imported Gujarati Hilsa as genuine Padma fish at steep prices despite buying them cheap.

While sea and river Hilsa look similar, authentic Padma Hilsa offers unmatched taste, texture, and aroma. Shoppers can easily identify real Padma Hilsa using four clear visual and sensory checks.

Physical Shape and Structure

Physical appearance clearly distinguishes river-caught Hilsa from imported marine varieties. Padma Hilsa is shorter, oval-shaped, and features a plump, deep middle section. It has a prominent upper back, a thick neck, and a heavy tail portion.

In contrast, Gujarati Hilsa from India's west coast is long, narrow, and lean. Marine fish lack the wide belly and heavy fat content seen in freshwater river species. 

Eye Clarity and Gills

Eye clarity reveals whether a Hilsa comes from fresh river water or deep-sea cold storage. Fresh Padma Hilsa features clear, transparent, and bright eyes.

Gujarati Hilsa shows blood-red or dark, cloudy eye rings due to long ice storage and marine conditions. Genuine river Hilsa also maintains bright red gills, whereas preserved fish turn dull over time. 

Scale Color and Sheen 

Scale brightness differs sharply between river and sea catches. Padma Hilsa displays ultra-shiny silver scales with a subtle pinkish-gold reflection under direct light. A faint reddish line runs along the center of its silver body.

Gujarati Hilsa has a dark or greyish shade along its back, lacking the rich golden-silver sheen of river fish. 

Taste, Oil, and Aroma

Natural river fat defines the legendary taste and rich scent of Padma Hilsa. Swimming upstream in fresh river water allows Padma Hilsa to accumulate high omega-3 oil levels, giving the meat a soft, melt-in-the-mouth texture. Cooking authentic river Hilsa fills the kitchen with a strong, pleasant aroma.

Marine Gujarati Hilsa has firm, dry meat, tastes bland, and lacks the signature river-fish scent.
